Autumn in Mabel’s Phrases, and a Prune Pie Recipe from Taos Pueblo

Prune Pie

2 – 9 inch pie crusts

1 bag pitted prunes
1 cup granulated sugar
1 tsp cinnamon
1 tsp nutmeg

Preheat the oven to 350. Boil the prunes in water for 10 minutes. Drain properly. Mash the sugar, cinnamon and nutmeg along with the boiled prunes till totally combined. Unfold the combination on a ready pie crust rolled to suit a 9 inch by 13 inch low-sided baking tray. Permit the sting of the crust to climb over the perimeters of the tray. Roll out the second crust and canopy the prune filling, crimping the perimeters to the underside crust. Bake at 350 for half of hour or till golden.
